Contrary to popular belief, not all the corn you see in produce markets and grocery stores are the same, but did you know that even local BC-grown corn comes in different varieties?
Corn can still be seasonal.
Local Corn is one of those natural anomalies that grow all year round in BC, but depending on the season in which it is harvested, the taste could turn out to be very different. Corn harvested during the colder months (those that you’ve seen in stores for the last few weeks) are smaller and less sweet than those harvested during summer months.
So what makes great corn?
The hot weather is most conducive to growing sweet juicy corn, just as long as it’s irrigated properly. Corn is much juicier when it receives a lot of water.
Apart from harvesting corn in summer, many say that corn picked at night, when temperatures are lower, are actually much sweeter than those picked during the day. This is because the cooler temperature preserves sugar levels and keeps them stable, thus yielding sweeter corn.

Make sure to choose the right kind.
Pick corn with kernels that feel ‘full’. Those that are nice and round and not empty towards the ends. Great corn is usually light yellow or ‘peachy’ in color. Kernels that are too yellow are overripe and may taste too starchy.
