Ingredients:

4 assorted vegetables cut in cubes (red potatoes, yams, carrots, peppers)
Salt to taste
1/2 cup brown sugar
dash white pepper


Direction:

1. Preheat oven to 450°F.
2. In large mixing bowl, combine all ingredients and toss
3. Put mixture in a heavyweight rimmed baking sheet
4. Place in the oven and roast until tender and slightly browned, about 40 minutes
5. Serve warm or at room temperature
