The Grand Ole "Olympian" Recipe

Strawberry and Avocado Spinach Salad

INGREDIENTS

1 tsp of honey
1 tsp of Dijon mustard
1 tsp of raspberry vinegar
1 tbsp of balsamic vinegar
2 tbsp of olive oil
1 5oz bag of baby spinach
2 handfuls of strawberries (sliced)
1 avocado (peeled, pitted, sliced)
1 handful of blue cheese (crumbled)
1 handful of pecans (chopped)

DIRECTIONS

1. Whisk together the honey, mustard, vinegars and olive oil into a dressing. You can refrigerate it for later or use right away.

2. Place the spinach in a bowl and add slices of avocado and strawberries on top.

3. Drizzle dressing to taste and then add the sliced pecans and blue cheese. If you prefer, you can also lightly toss the salad.
