Recipes: Thanksgiving Treats

For two delicious treats, try these tasty uses of pumpkins that will sure to get you into the Fall Season mood!
Pumpkin Pie Recipe:

Ingredients:
* 1 pastry recipe for 9 inch pie crust
* 2 cups (480ml) milk, scalded
* 2 cups (450g) pumpkin, cooked and strained
* 1 cup (240ml) maple syrup
* 1/8 cup (30g) sugar
* 1 Tbsp. flour
* ½ tsp. salt
* 1 tsp. ginger
* 1 tsp. cinnamon
* 1/4 tsp. nutmeg (optional)
* 2 large eggs, beaten

Instructions:
1. Heat the oven to 425 degrees F or 220 degrees C
2. Line pie tin with pastry
3. Mix all ingredients together and pour into pastry case
4. Place on a baking sheet.
5. Bake in preheated oven for 1 hour. Remove from oven and put on a wire rack and leave to cool.

Pumpkin Cake Recipe

Ingredients:
*2 cup Pumpkin
*3 cup Sugar
*1 cup Oil
*3 Eggs
*3 cup Fine Wheat Flour (Maida)
*1/2 tsp Salt
*1/2 tsp Baking Powder
*1 tsp Baking Soda
*1 tsp Cloves Powder (Lavang)
*1 tsp Cinnamon Powder (Tuj/Dalchini)
*1 tsp Nutmeg Powder (Jaiphal)

Instructions:
1. In a blender, add pumpkin, sugar, oil and eggs.
2. In a bowl sift flour, salt and baking powder and baking soda.
3. Now mix the blended pumpkin and egg mixture to the dry ingredients and mix well.
4. Pour the mixture in a wax paper lined 8" pan.
5. Bake the pan in a preheated oven at 350F for 1 hour and fifteen minute.
6. When done take it out with the help of a knife and dust with powdered sugar.
